Over the past months, we’ve explored cocoa from many angles. Its origins, its transformation, its chemistry, and the evolution of chocolate as we know it today.

This month, we take a different step.

Beyond flavour and structure, cocoa carries a human story, one shaped by history, labour, land, and change.

Understanding cocoa fully means looking not only at how it behaves in baking, but also at how it exists in the world.




🌍 A Global Ingredient With a Complex Past

As cocoa spread beyond its native regions, it became part of expanding global trade systems, shaped by colonial power.

During this period, the cultivation of crops like cacao was often tied to systems of forced and exploitative labour, where local populations and, in some regions, enslaved people were made to work under harsh conditions to meet growing demand.

These realities played a role in establishing cocoa as a global commodity.

Today, while the industry has evolved, many cocoa-producing regions still face economic imbalance, where those growing the ingredient receive only a small share of its final value. Understanding this history helps us better understand the importance of how cocoa is sourced today.



⚖️ Cocoa Production Today


Most of the world’s cocoa is grown by smallholder farmers in regions close to the equator.

These farmers:

  • Work on small plots of land.

  • Depend heavily on seasonal yields

  • Face challenges from climate change and soil health.

In many cases, income remains unstable, even as global demand for chocolate continues to grow.

Over time, different systems have been introduced to improve transparency and working conditions in cocoa production.

Some of the most recognised include:

  • Fairtrade: Focuses on minimum pricing and better trading conditions for farmers.

  • Rainforest Alliance: Emphasises environmental protection and sustainable farming practices.

  • Direct Trade Models: Often they involve closer relationships between producers and buyers, with greater traceability and pricing transparency.

Each approach has its strengths and its limitations. No single label guarantees perfection. But each represents a step toward a more conscious system.

There is meaningful progress happening across the cocoa landscape. Some of the most promising developments include:

  • Agroforestry systems, where cacao grows alongside other crops, supporting biodiversity

  • Soil regeneration practices that improve long-term land health

  • Improved fermentation techniques that enhance both quality and value

  • Greater traceability, allowing producers to be recognised for their work

These changes are not always visible but they shape the future of cocoa in important ways.

Change does not only happen at large scale. Small businesses play a role too.
